Ingredients:
- 2 tablespoons of chia seeds
- 1/2 cup of oats
- 1 banana
- 1 egg
- 1/2 cup of semi-skimmed milk
- A dash of rum (for flavor, optional)
- 1/2 teaspoon of baking powder
- Coconut oil (for frying)
- Skyr or white yogurt
- sliced apples, and cinnamon (for serving)
Instructions:
- Grind chia seeds and oats in a blender until they reach a flour-like consistency.
- In another blender, mix the banana and egg.
- Combine the wet ingredients with semi-skimmed milk and a bit of rum for flavor, if desired. Gradually add the blended oats and chia seeds to form a pancake batter.
- Finally, add a little baking powder and mix thoroughly.
- Heat a pan with a bit of coconut oil and pour the pancake batter to make pancakes. Cook them slowly on both sides for about 4 minutes.
- You can serve the pancakes with your choice of toppings. In this case, the recipe author recommends skyr (or white yogurt), sliced apples, and a sprinkle of cinnamon.
