Healthy Pancakes

Ingredients:

  • 2 tablespoons of chia seeds
  • 1/2 cup of oats
  • 1 banana
  • 1 egg
  • 1/2 cup of semi-skimmed milk
  • A dash of rum (for flavor, optional)
  • 1/2 teaspoon of baking powder
  • Coconut oil (for frying)
  • Skyr or white yogurt
  • sliced apples, and cinnamon (for serving)

Instructions:

  1. Grind chia seeds and oats in a blender until they reach a flour-like consistency.
  2. In another blender, mix the banana and egg.
  3. Combine the wet ingredients with semi-skimmed milk and a bit of rum for flavor, if desired. Gradually add the blended oats and chia seeds to form a pancake batter.
  4. Finally, add a little baking powder and mix thoroughly.
  5. Heat a pan with a bit of coconut oil and pour the pancake batter to make pancakes. Cook them slowly on both sides for about 4 minutes.
  6. You can serve the pancakes with your choice of toppings. In this case, the recipe author recommends skyr (or white yogurt), sliced apples, and a sprinkle of cinnamon.
