Ingredients:
- 1 cup of French green lentils
- 1 whole broccoli
- Butter
- 1 leek
- Salt and pepper to taste
- Nutritional yeast
- Grated blue cheese (for garnish)
Instructions:
- Cook the French green lentils according to the package instructions.
- While the lentils are cooking, bring water to a boil in another pot and cook the whole broccoli for about 10 minutes.
- Drain the water and allow the broccoli to cool under cold, running water to preserve its vibrant green color. Then, cut it into small florets and add them to the cooked lentils. Season with salt and pepper to taste.
- In a pan, heat some butter and sauté the leek, sliced into rings, for approximately 5 minutes.
- Then, add the lentil and broccoli mixture to the leeks in the pan. For enhanced flavor, you can add nutritional yeast.
- When serving, sprinkle the dish with grated blue cheese for garnish.
