Ingredients:
- Soba noodles
- Smoked tofu
- Butter
- Leek
- Carrots
- Peas
- Corn
- Korean BBQ sauce (or sauce of your choice)
- Salt and pepper to taste
- Roasted unsalted peanuts (for garnish)
Instructions:
- Start by bringing water to a boil in a pot.
- Meanwhile, cut the smoked tofu into cubes and sauté them in a hot pan with butter.
- Slice the leek into rings and add it to the tofu after a while. Continue sautéing.
- Then, add a mixture of vegetables, such as carrots, peas, and corn. Also, add your chosen sauce (in this case, Korean BBQ sauce). Season with salt and pepper to taste and let the mixture simmer gently.
- Once the water in the boiling pot is ready, add the soba noodles and cook them according to the package instructions.
- After cooking, add the soba noodles to the vegetable and tofu mixture and mix thoroughly.
- Serve, and for an extra touch, garnish the dish with roasted unsalted peanuts.
