Ingredients:
- 100 g tapioca pearls
- 400 ml coconut milk
- 300 ml semi-skimmed milk
- 100 g cottage cheese
- 100 g skyr
- Mango
- Almonds
- Grated coconut for sprinkling
- Optional sweetener to taste
Instructions:
- Rinse the tapioca pearls several times and then place them in a saucepan.
- Add coconut milk, semi-skimmed milk, cottage cheese, and skyr to the saucepan. Bring to a gentle boil while stirring constantly to prevent the tapioca pearls from sticking. Cook for about 10-15 minutes or until the pearls become soft and translucent.
- If desired, sweeten the pudding to taste, although it may not be necessary.
- After cooking, transfer the pudding into bowls, sprinkle with grated coconut, and top with sliced mango and almonds. However, feel free to customize the fruit toppings to your liking.
- You can enjoy the pudding warm or cold from the refrigerator.
