Ingredients:
- 4 cleaned zucchinis
- Salt
- 3 eggs
- 1 grated mozzarella
- Approximately 40 g of blended flaxseeds
- Black pepper
- Filling of your choice (e.g., fresh cheese, smoked tempeh, spring onions, camembert)
Instructions:
- Coarsely grate 4 cleaned zucchinis, season them with salt and let them drain. After about 10 minutes, squeeze out the water from the zucchini.
- Add 3 eggs, 1 grated mozzarella, and approximately 40 g of blended flaxseeds to the zucchini. Season with salt and black pepper to taste.
- Spread one half of the mixture onto a baking dish lined with parchment paper and place it in a preheated oven at 390°F for approximately
20 minutes. Remove the dough when it turns slightly golden and let it cool for a while. - Choose your filling according to your preference.
Such as fresh cheese and grated smoked tempeh or fresh cheese, sliced spring onions and camembert. - Roll the dough with the filling and return it to the oven, this time at 390°C and bake for about 20 minutes.
- After removing from the oven, let it cool and then slice it into rounds.
You can serve it on its own, with sour cream and herbs or with a sauce made from peanut butter, olive oil, soy sauce, lemon juice, and a pinch of curry – which is what I did.
